一、鱼头豆腐汤

1.准备一个胖鱼头,从中间劈开,去掉鱼鳃,清洗干净后放入盆中;一块老豆腐,切成菱形块放入盘中;几片生姜片,几根大葱段;八角几粒,适量香菜段放入碗中备用。

2.热锅倒入凉油,将鱼头朝下放入锅中,晃动炒锅,放入葱姜和八角,淋少许料酒,加适量清水,漫住鱼头;再放入豆腐块,大火炖煮15分钟。

二、鸡蛋汤

1.拿出两个鸡蛋,打入碗中,搅匀打散;一个西红柿切成滚刀块,几朵泡发的黑木耳,切成小片,一小把黄花菜,泡好之后切成小段,一起放入盆中;两根小葱切成葱花,香菜一小把切成段,一起放入盘中备用。

2.锅中加适量的清水,倒入配菜,再放食盐、胡椒粉、鸡粉各适量,大火把汤汁烧开,加入陈醋适量、冬古酱油适量,勾入适量的水淀粉,使汤汁浓郁粘稠。

3.煮开以后,倒入鸡蛋液,滑动几下,再淋入少许芝麻油,即可关火起锅装入汤盆中,再撒上少许香菜和葱花,营养又好喝。

三、菌菇三鲜汤

1.准备两只新鲜的大虾,从背部片开,去掉虾线,处理干净过放入小盆中;4个香菇切成小块,一小把白玉菇去掉根部,一小块老豆腐切成薄片,两个鸡蛋打入盆中,搅匀备用。两根香菜切成段备用。

2.起锅烧水,加一勺食盐和少许植物油,水开后下入香菇,白玉菇和豆腐,开大火煮两分钟左右,倒出控水拔凉。

4.水开后下入香菇,白玉菇和豆腐,再下入虾仁,搅拌几下开始调味,加入食盐、鸡粉、胡椒粉各适量,煮两分钟。
