2.煮一锅清水至完全沸腾,菠菜沥水后放入沸水中。

3.把菠菜轻轻焯熟,捞出过凉水。

4.焯好的菠菜捏去水分,用刀简单拦两刀,放入大碗内。

5.蚬子肉冲洗干净,沥干水分。

烹饪小贴士:
1.菠菜可以经常用来烧汤,凉拌,单炒,和配荤菜合炒或垫盘。以色泽浓绿,根为红色,不着水,茎叶不老,无抽苔开花,不带黄烂叶者为佳。2.烹调时间不宜过长,因为维生素C遇热后容易氧化。3菠菜不宜与黄瓜、豆腐同食。4.买蛤蜊要选择张嘴换气的,这样的活蛤蜊吃起来更鲜美。张开壳的说明已经死亡,炒的时候会有腥臭味。5.清洗蛤蜊将其在淡盐水中浸泡10分钟,泥沙杂物会自动脱离,搓洗至水清。在干净的淡盐水中滴少许香油,用筷子将装蛤蜊的漏筐支在水盆中央,可让蛤蜊吐出大量泥沙,吐出的沙子直接沉底,再吸进去的水便是干净的,等到蛤蜊吐不出泥沙时即可。
